Shrimp Stir Fry
  Turn to this when it is needed to cook a quick meal. This well loved dish only takes minutes to cook. It is possible to substitute chicken for the shrimp for excellent results.  
Makes 3-4 servings

  • .25 cup soy sauce

  • 1 small julienned green pepper

  • 1-2tbsp veggie oil

  • 1.5 cup broccoli florets

  • 1cup orange juice

  • 1lb peeled and deveined uncooked shrimp

  • 1small sweet julienned sweet red pepper

  • 1tbsp cornstarch

  • 1tsp ground ginger

  • 2tsp brown sugar

  • hot cooked rice

In a skillet, stir fry broccoli and peppers in oil until tender. Add shrimp, stir fry for 3-5 minutes or until shrimp turn pink. Combine the cornstarch, brown sugar, ginger, orange juice and soy sauce until smooth, add to skillet. Bring to a boil, cook and stir for 2 minutes or until thickened. Serve over rice.
