Poached Salmon
  This tasty recipe is easy to prepare  
Makes 4 servings

  • .25 cup finely chopped onion

  • .5tsp dill weed

  • .5tsp dried parsley flakes

  • .5tsp dried tarragon

  • .5tsp lemon pepper seasoning

  • .75 cup chicken broth

  • 1 minced garlic clove

  • 1.5cups water

  • 2tbsp butter or margarine

  • 4 salmon steaks, one inch thick

  • Sauce- .25 cup plain yougurt

  • Sauce- .25 mayonnaise

  • Sauce- .5 cup finely chopped zuchini

  • Sauce- 2tbsp chopped green onions

In a large skillet, saute onion and garlic in butter. Add the water broth and seasonings. Add salmon, bring to a boil. Reduce heat, cover and simmer for 20-25 minutes or until fish flakes easily with a fork. Meanwhile, in a small bowl, combine the sauce ingredients. Serve with the salmon.
