Greenmarket Gibson
  This drink is inspired by the farmers at the union square greenmarket in NYC, where walking among the great produce is pure delight. The subtlety of the herb blend in this drink makes it a wonderful aperitif at any time of year. Add a peppery leaf such as arugula for even more zip.  
Makes fourteen 3 oz drinks

  • 1 large branch rosemary

  • 1 liter vodka

  • 1 small bunch or 1 dozen Basil Leaves rinsed

  • 2 oz boiling water

  • 2 oz ice water

  • 3 bay leaves

  • 5 sprigs cilantro

  • 5 sprigs parsley

  • 5.5 oz dry vermouth

  • small cocktail glasses

Teh herb vodka requires 3 days of refrigerator. Once the herbs are removed, it will keep indefintitely in the refrigerator. Herb Vodka: Place the herbs in a 2 qt canning jar with a tight fitting lid. Add the boiling water, close the lid tightly, and shake. Allow to steep until the herbs are bright green, about 10 minutes. Add the ice water, vodka, and dry vermouth. Close the jar and shake shake shake. Allow to steep in a cool spot or refrigerator for 3 days, until the liquid turns bright green. Remove and discard the herbs. To Serve: Fill a cocktail shaker with ice, pour in 3 oz of herb vodka per drink and shaky wakey. Strain into glasses, add onion and serve.
